What a great little kitchen helper Kylee has become. She just has to help with everything. Fine by me, hopefully she grows up loving to bake as much as I do! I had always thought the banana bread that I make was the best thing I baked. Ryan thought so too, said it was the best he had ever had. Then I surprised him with my first ever pumpkin bread last year and it was a HUGE hit in our household. Even Ryan's brother, whom I gave a loaf to, was like "whoa!" I don't usually eat what I bake, but I may have eaten half a loaf myself. But since the holidays last year, he's been hounding me about once a month for more pumpkin bread. Guess the banana bread got put on the back burner? Well, I finally made it for him again yesterday so Ryan is happy. Kylee was a happy little helper. And I must say, the bread is fantastic.
2 cups pumpkin
4 eggs
2 cups white sugar
1 cup brown sugar
1 cup vegetable oil (or 1/2 oil 1/2 applesauce)
2/3 cup water
3.5 cups flour
2 tsp baking soda
1.5 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/2 tsp ginger
1/4 tsp cloves
1/4 tsp pumpkin pie spice
* Mix pumpkin, eggs, both sugars, water, and oil until mixed well. In a seperate bowl, combine all dry ingredients and whisk. Then gradually add to the pumpkin mixture until mixed well. Pour into two 8 x 4 pans that are greased and floured. Bake at 350 degrees for about 60 minutes until an inserted toothpick comes out clean. When bread is done (and still hot), poke holes into the top with a toothpick and drizzle melted butter mixed with cinnamon and sugar and allow to seep down inside. And voila! The best pumpkin bread ever known.
